These are folding knives first made about 1780 used for peeling and cutting fruit, especially on picnics. Most have a sterling silver blade, but sometimes the blades are gold or silver plate. Handles are most commonly mother of pearl, although fruit knives are also available with ivory, horn and tortoiseshell handles. They also come boxed so they can be given as a gift, either singly, or in a set with a fork, when they are often called "paring sets".
